Cilantro-Turkey Burgers

pound uncooked ground turkey

cup snipped fresh cilantro or 1/4 cup snipped fresh flat-leaf parsley plus 1 tablespoon dried coriander, crushed

cup finely chopped onion

teaspoons bottled minced garlic (4 cloves)

teaspoon ground black pepper

kaiser rolls, split and toasted

Directions
1. For burgers, in a large bowl gently combine turkey, the cilantro, the chopped onion, garlic, salt, and pepper. Shape turkey mixture into four 3/4-inch-thick patties. Brush tops of patties with oil.
2. Place patties on the grill rack directly over medium heat; grill for 14 to 18 minutes or until no longer pink (165 degrees F), turning once halfway through grilling.
3. Spread cut sides of rolls with Orange-Cilantro Mayonnaise. Serve patties in rolls with lettuce and, if desired, sliced onion. Makes 4 servings.

Directions
In a small bowl combine mayonnaise or salad dressing, cilantro, orange peel, and orange juice. Makes about 1/2 cup.
