Tropical Fig Salad

Ingredients

tablespoons olive oil

tablespoons lemon juice

tablespoons chopped fresh chives

cups torn mixed salad greens

fresh figs, quartered lengthwise

medium mango, seeded, peeled, and cut into chunks

Directions

    For the vinaigrette:
  1. In a screw-top jar, combine olive oil, lemon juice, chives, pepper, and salt. Cover and shake well; set aside.
  2. In a large bowl, toss together greens, figs, and mango. Drizzle mixture with vinaigrette; toss gently to coat.
