Tofu Salad Dressing
Ingredients

ounces soft tofu (fresh bean curd), cubed

cup buttermilk

tablespoons vinegar

teaspoon Italian seasoning, crushed

teaspoon dry mustard

small clove garlic, minced

Dash salt

Dash pepper

teaspoon celery seed
Directions
1. In a blender container or food processor bowl combine tofu, buttermilk, vinegar, Italian seasoning, dry mustard, garlic, salt, and pepper.
2. Cover and blend or process until smooth.
3. Transfer to a covered container. Stir in celery seed. Cover and chill at least 2 hours or up to 24 hours. Makes 5 (2-tablespoon) servings.

This was pretty good but it needed .... something .... so I squeezed in the juice from 1/2 a lemon and it really helped cut the thick taste. will definitely use this as a base for other types of dressings ... nice to have a salad dressing with protein in it!
