Thai-Style Beef Salad
Ingredients
  • 2 tablespoons  bottled Italian salad dressing
  • 2 - 3 teaspoons  lime juice
  • 1 1/2 teaspoons  soy sauce
  • 1 teaspoon  snipped fresh cilantro
  • 2 cups  fresh spinach leaves or torn mixed salad greens
  • 1/4 cup  purchased shredded carrot
  • 1/2 cup  shredded leftover roast beef
  • 1 tablespoon  chopped peanuts
Directions

1. For dressing, in a small container with a tight-fitting lid, combine dressing, lime juice, soy sauce, and cilantro; cover and shake well. Chill for up to 24 hours.

2. In a container with a lid, combine spinach, carrot, beef, and peanuts. Cover and chill for up to 24 hours.
