Thai-Style Beef Salad
Ingredients
- 2 tablespoons bottled Italian salad dressing
- 2 - 3 teaspoons lime juice
- 1 1/2 teaspoons soy sauce
- 1 teaspoon snipped fresh cilantro
- 2 cups fresh spinach leaves or torn mixed salad greens
- 1/4 cup purchased shredded carrot
- 1/2 cup shredded leftover roast beef
- 1 tablespoon chopped peanuts
Directions
1. For dressing, in a small container with a tight-fitting lid, combine dressing, lime juice, soy sauce, and cilantro; cover and shake well. Chill for up to 24 hours.
2. In a container with a lid, combine spinach, carrot, beef, and peanuts. Cover and chill for up to 24 hours.
