Thai-Style Beef Salad
tablespoons bottled Italian salad dressing
teaspoons lime juice
teaspoons soy sauce
teaspoon snipped fresh cilantro
cups fresh spinach leaves or torn mixed salad greens
cup purchased shredded carrot
cup shredded leftover roast beef
tablespoon chopped peanuts
- For dressing, in a small container with a tight-fitting lid, combine dressing, lime juice, soy sauce, and cilantro; cover and shake well. Chill for up to 24 hours.
- In a container with a lid, combine spinach, carrot, beef, and peanuts. Cover and chill for up to 24 hours.

Pack dressing and salad mixture separately in insulated container with ice packs. To serve, shake dressing; add dressing to spinach mixture and toss to coat.
