Spicy BLT Salad
Ingredients

cups torn iceberg lettuce blend (about 12 ounces)

11 ounce can whole kernel corn with sweet peppers, drained

large tomato, coarsely chopped

slices bacon, crisp-cooked, drained, and crumbled

cup chopped fresh cilantro leaves

Chipotle Ranch Dressing (see recipe, below)
Directions
Combine lettuce blend, corn, tomato, bacon, and cilantro in large salad bowl. Pour dressing over lettuce mixture; gently toss to coat. Serve immediately. Makes 4 to 6 servings.
Chipolte Ranch Dressing
Yield: Makes 1/2 cup
