Spicy BLT Salad
Ingredients

    cups torn iceberg lettuce blend (about 12 ounces)
  • 1
    11 ounce can whole kernel corn with sweet peppers, drained
  • 1
    large tomato, coarsely chopped
  • 8
    slices bacon, crisp-cooked, drained, and crumbled
  • 2/3
    cup chopped fresh cilantro leaves
  • Chipotle Ranch Dressing (see recipe, below)
Directions

Combine lettuce blend, corn, tomato, bacon, and cilantro in large salad bowl. Pour dressing over lettuce mixture; gently toss to coat. Serve immediately. Makes 4 to 6 servings.

Chipolte Ranch Dressing

Yield: Makes 1/2 cup
Ingredients
  • 1/2
    cup bottled ranch salad dressing
  • 1
    finely chopped chipotle pepper in adobo sauce
Directions

Combine the ranch salad dressing and chipotle pepper. Makes 1/2 cup.
