Quick-Toss Fruit Slaw
Ingredients

16 ounce package (4 cups) shredded cabbage with carrot (coleslaw mix)

cup shredded red cabbage (optional)

medium apples, cored and coarsely chopped

6 ounce package mixed dried fruit bits (3/4 cup)

cup chopped pecans, toasted

8 ounce carton low-fat vanilla yogurt

teaspoon ground nutmeg
 
Apple slices (optional)
 
Italian parsley (optional)
Directions
  1. Toss together cabbage mixture, red cabbage (if using), apples, dried fruit bits, and pecans in a large mixing bowl.
  2. For dressing, combine yogurt and nutmeg. Pour dressing over apple mixture; toss to coat. Serve immediately, or cover and chill for up to 4 hours. Garnish with apple slices and Italian parsley, if desired. Makes 10 to 12 servings.
