Orange-Ginger Fruit Salad
- In a small bowl combine mayonnaise, sour cream, vinegar, orange peel, orange juice,and ginger.
- In a large bowl combine fruits. Add dressing; stir gently to combine. Cover and chill for 1 to 2 hours. (Do not chill any longer than 2 hours, as fruit will water out). Just before serving, sprinkle with Candied Gingered Macadamia Nuts. Makes 12 servings.
Candied Gingered Macadamia Nuts
- Line a small baking sheet with foil. Butter foil; set aside. In a small skillet combine macadamia nuts, sugar, the 1 tablespoon butter, and ground ginger. Cook over medium-high heat, shaking skillet occasionally, until sugar begins to melt. Do not stir. Reduce heat to low. Continue cooking until sugar is golden brown, stirring occasionally. Transfer nut mixture to prepared baking sheet. Cool completely. Break into clusters.
