Mother Meg's Tomato Salad
Ingredients

    seasonal beefsteak or heirloom tomatoes
  • 1/2
    cup olive oil
  • 1/4
    cup balsamic vinegar
  • 1/4
    cup chopped flat-leaf Italian parsley
  • 1/2
    teaspoon coarse salt

Directions

Cut tomatoes into 1-inch slices. Arrange tomatoes on a platter. Drizzle with olive oil and vinegar. Sprinkle with parsley, salt, and pepper. Serve immediately.
