Leaf-Peeking Slaw

Ingredients

cups 1-inch pieces red cabbage

medium Golden Delicious apples, cored and cubed

medium carrots, sliced

cup chopped red onion

cup salad oil

cup red wine vinegar

tablespoon Dijon-style mustard

teaspoon sugar

Directions

  1. In a large bowl combine the cabbage, apples, carrots, and onion. For dressing, in a bowl whisk together the oil, vinegar, mustard, sugar, salt, and pepper until well combined. Add dressing to salad; toss to coat. Refrigerate, covered, for 2 to 24 hours. Makes 6 servings.
