In a large bowl combine pasta, sweet pepper, onion, and olives.
For dressing, in a screw-stop jar combine vinegar, oil, mint, lemon juice, sherry, seasoned salt, garlic powder, pepper, and crushed red pepper. Cover and shake well. Pour over pasta mixture. Cover and chill 4 to 24 hours.
To serve, stir in cheese. Serve with a slotted spoon. Makes 12 to 14 servings.
