
1. Melt 1 tablespoon butter over medium heat in large skillet. Add potatoes. Cover and cook about 15 minutes or until golden, stirring occasionally.
2. Meanwhile, place greens on plates. Top with tuna, tomatoes, and potatoes. Drizzle vinaigrette. Season with salt and pepper.
3. *Note: If you can't find lemon pepper tuna, use any herb-seasoned tuna.
