Fast Nicoise Salad
cups refrigerated red potato wedges
cups packaged mixed salad greens
5 ounce pouches or cans lemon-pepper chunk light tuna*
cup cherry tomatoes
cup bottled roasted garlic vinaigrette salad dressing
- Melt 1 tablespoon butter over medium heat in large skillet. Add potatoes. Cover and cook about 15 minutes or until golden, stirring occasionally.
- Meanwhile, place greens on plates. Top with tuna, tomatoes, and potatoes. Drizzle vinaigrette. Season with salt and pepper. Makes 4 servings.
