Easy Carrot Ribbon Salad
Ingredients
- 1 tablespoon drained juice from a jar of pitted ripe olives, or lemon juice
- 1 tablespoon olive oil
- 4 yellow and/or orange carrots, peeled
- 1/3 cup sliced green onions
Directions
1. For dressing, in a medium bowl whisk together olive liquid, olive oil, and 1/8 teaspoon each salt and pepper; set aside.
2. Using a vegetable peeler, peel carrots lengthwise into long strips, or coarsely shred them. Add to dressing mixture along with sliced green onions. Makes 4 servings.
