Caribbean Slaw
Ingredients

tablespoons snipped fresh basil or 1 teaspoon dried basil, crushed

tablespoons snipped fresh mint or 1 teaspoon dried mint, crushed

tablespoons rice vinegar or white wine vinegar

cups thinly sliced napa cabbage or savoy cabbage (about one half of a small head

mango, peeled, pitted, and sliced, or 2 peaches or nectarines, pitted and sliced)

large cucumber, peeled, seeded, and cut into pieces

small red sweet pepper, cut into matchstick-size pieces

small red onion, quartered and thinly sliced
Directions
1. For dressing, combine basil, mint, olive oil, vinegar, and soy sauce in a screw-top jar. Cover and shake. Set aside.
2. Combine the cabbage; mango, peaches, or nectarines; cucumber; sweet pepper; and red onion in a large bowl. Add the dressing, gently tossing to combine. Serve immediately. Makes 5 side-dish servings.
