Brain Power Salad
Ingredients

cup low-fat mayonnaise dressing or salad dressing

teaspoons sugar

teaspoon cider vinegar

cups broccoli florets

cup shredded carrot (1 medium)

cup shredded reduced-fat cheddar cheese (1 ounce)

cup sliced water chestnuts, drained

tablespoons chopped red onion (optional)

tablespoons crumbled crisp-cooked bacon
Directions
1. For dressing, in a small bowl stir together mayonnaise dressing, sugar, and vinegar.
2. In a medium bowl combine broccoli, carrot, cheese, water chestnuts and, if desired, onion. Pour dressing over broccoli mixture; toss to coat. Sprinkle with bacon. Cover and chill for 1 to 5 hours. Makes 4 side-dish servings.
