Ruby Rhubarb Lemonade

Ingredients

cups thinly sliced or chopped fresh rhubarb
1 1/2
cups sugar
1
cup lemon juice or lime juice
5
cups cold water
1
cup club soda, tequila, or Campari
 
Ice cubes

Directions

  1. In a pitcher, use a muddler or potato masher to mash together rhubarb, sugar, and lemon juice. Stir in the water until sugar is dissolved. Stir in club soda. Serve over ice.

To Store:

Lemonade can be made as directed and chilled up to 24 hours before serving. If using the club soda, stir in right before serving.
