Pickled Red Onion & Red Cabbage Relish

Ingredients

medium red onion, halved and very thinly sliced

cups very thinly shredded red cabbage

cup packed brown sugar
1/2
cup cider vinegar

Directions

  1. In a large glass bowl combine onion, cabbage, brown sugar and vinegar; stir to combine. Cover and chill overnight, stirring occasionally. Mixture may be stored in refrigerator up to 3 days. Makes 3-1/2 cups (23, 2-tablespoon servings).
