Green Tomato Chow Chow

medium green tomatoes, chopped (1-1/2 cups)

medium white onion, chopped (1/2 cup)

small green sweet pepper, chopped (1/2 cup)

cup sauerkraut, rinsed and drained

tablespoons sugar

tablespoons white vinegar

tablespoon yellow mustard

teaspoon salt
Directions
In a large food processor combine tomatoes, onion, sweet pepper, sauerkraut, sugar, vinegar, mustard and salt. Process with several on/off turns until coarsely chopped. Transfer to a bowl. Let stand at room temperature at least 2 hours before serving or cover and chill for up to 1 week. Makes about 3 cups (24, 2-tablespoon servings).
