Gingerberry Relish

Ingredients

  • 1  8-1/4-ounce can crushed pineapple (syrup pack)
  • 2/3  cup sugar
  • 1/2  cup water
  • 3/4  teaspoon ground ginger
  • 1  12-ounce package (3 cups) cranberries
  • 1/2  cup chopped walnuts

Directions

1. In a medium saucepan combine the undrained pineapple, sugar, water, and ginger. Cook and stir over medium heat until sugar is dissolved.

2. Add cranberries. Bring to boiling; reduce heat. Cook and stir 3 to 4 minutes more or until cranberries pop. Transfer to an airtight container. Cover and chill for up to 3 days. Stir in walnuts before serving. Makes 10 to 12 servings.

To Present This Gift... Cut a 16-inch piece of wire. Wind one end around an ice pick so beads won't slip off. Remove the ice pick. String on 3 inches of beads, spacing glass and seed beads with gold beads. Add 8 inches of seed beads, stringing on in a pattern, if desired. Finish the end in the same manner as the first 3 inches. Wind the end of the wire around the ice pick to curl. Remove ice pick. Wrap the beaded wire around the top of the jar and twist to secure. If the wire slips down on the jar, use silicone glue to hold it in place. Let glue dry. Fill jar with Gingerberry Relish.

Also try this... Combine three colors of curling ribbon and tie them around the top of the jar. Curl the ends.

Medium-weight crafting wire
Ice pick
Glass beads in various sizes and shapes
Seed beads
Small gold beads
Glass jar with lid
Silicone glue (if needed)
