Cranberry-Kumquat Relish
Ingredients
- 2 cups cranberries (1/2 pound)
- 3/4 cup fresh kumquats, seeded and coarsely chopped (4 ounces)
- 2/3 cup granulated sugar
- 2/3 cup packed brown sugar
- 1/2 cup orange juice
- 1 teaspoon grated gingerroot or 1/4 teaspoon ground ginger
- 1/4 cup coarsely chopped walnuts
Directions
1. Combine cranberries, kumquats, granulated sugar, brown sugar, orange juice, and gingerroot or ground ginger in a medium saucepan. Bring mixture to boiling. Reduce heat. Simmer, uncovered, over medium-low heat for 8 minutes, stirring frequently. Stir in walnuts. Makes 2-1/2 cups.
