Really Red Coleslaw
- In a large bowl, combine cabbage, onion, and dried cherries. Set aside.
- In a small bowl, stir together salad dressing and preserves. Pour over cabbage mixture; toss gently to coat. If desired, cover and chill for up to 6 hours.

Really red, really delicious & really easy--a 5 star keeper that got lots of compliments! None of the 4 grocery stores in town had packaged shredded red, so I started w/a 3# head & trimmed for my party triple batch. The green wouldn't be as pretty, but more tender than red. Be sure to measure the onion, not go on size, because it can be hot & overwhelm the other flavors.
