Easy Homemade Fritters
Ingredients
  • 1
    15 ounce container ricotta cheese
  • 4
    eggs
  • 1
    tablespoon vanilla
  • 1 1/2
    cups all-purpose flour
  • 1/2
    cup granulated sugar
  • 2
    tablespoons baking powder
  • 1/2
    teaspoon salt
  • Cooking oil for frying
  • Sifted powdered sugar or granulated sugar or cinnamon/sugar
Directions

In a large bowl beat ricotta cheese with an electric mixer on medium speed until smooth. Add eggs and vanilla; beat until combined. Add flour, granulated sugar, baking powder, and salt. Beat on low speed until just combined. Let batter stand for 30 minutes. Drop batter by well-rounded teaspoonfuls, four or five at a time, into deep hot fat (365 degrees F). Cook 2-1/2 to 3 minutes or until golden brown, turning once. Remove fritters with slotted spoon and drain on paper towels. Repeat with remaining batter. Cool completely. Shake fritters in a bag with powdered sugar, granulated sugar, or cinnamon/sugar mixture. Makes 3 dozen.

Ripped this reader-submitted recipe out of a BHG magazine years ago and have made them many times. They are absolutely delicious; one of my (Italian) husband's all-time favorites. If you quarter the recipe, it still makes a lot. And some things are worth eating regardless of the calories!

Looks like a delicious recipe.I am making it now for supper. If anyone is interested, one cup of flour is 800 calories. This doesnot count the other ingredience. This should help you calculate all the calories.

I dont believe they can be baked. Truth be told, I never tried. The consistency of the batter might hold up to baking, but at what temp and for how long i couldn't tell ya
