Rice Pudding with Dried Apricots

12 ounce can evaporated milk

14 ounce can sweetened condensed milk

8 1/2 ounce pouches long-grain cooked rice

tablespoons crystallized ginger

6 ounce bag dried apricots
Directions
1. Spray the inside of a 4- or 5-quart slow cooker with nonstick cooking spray.
2. In large bowl whisk together evaporated milk, condensed milk, eggs, and salt. Stir in rice, crystallized ginger, and dried apricots. Pour into slow cooker.
3. Cover and cook on low-heat setting for 2 to 4 hours. Makes 8 servings.

10/28/2011 01:17:05 AM Report AbuseI would think that if you cook 1 cup of rice you will end up with the right amount for this recipe. (2) packages of 8.8 oz of precooked rice is a tad over 2 cups. Good luck.
