Zesty Baked Potato Skins
Ingredients
  • 1
    baking potato
  • 2
    tablespoons margarine or butter, softened
  • Dash salt
  • Dash pepper
  • 1
    tablespoon steak sauce or salsa
  • 2
    tablespoons dairy sour cream
  • 2
    slices bacon, crisp-cooked, drained, and crumbled
  • 2
    tablespoons sliced green onion
  • 2
    tablespoons chopped green pepper
  • 1/3
    cup shredded cheddar or Swiss cheese
Directions

1. Scrub potato well; prick with a fork. Bake in a 425 degree F oven about 40 minutes or until tender.

2. Cool slightly. Cut lengthwise into quarters. Remove cooked potato insides, leaving 3/8-inch shells. (Reserve cooked potato for soup, potato salad, or another use.) Place shells, cut side up, in a baking pan. Brush with margarine or butter; sprinkle with salt and pepper.

3. Broil 4 inches from the heat for 1 to 2 minutes or until crisp. Brush with steak sauce or salsa. Spoon sour cream on each shell and sprinkle with bacon, green onion, and green pepper. Top with shredded cheese. Return to broiler and broil about 1 minute or until cheese melts. Makes 1 serving.
