In a medium bowl combine onion, peanuts, cilantro, ginger, 3 cloves garlic, red pepper, and 1 teaspoon salt. Add pork; mix well. Shape into four 12inchthick patties to fit rolls. Brush patties with sesame oil; cover and set aside. For sauce, in a small bowl stir together chili sauce, peanut butter, and 1 clove garlic; set aside.
