Pecan-Crusted Pork with Orange-Maple Glaze

cup pecan pieces, finely chopped

oranges (1 juiced; 1 cut in wedges)

tsp. cayenne pepper
directions
1. Trim pork, then cut into 1/2-inch slices. Flatten slices with palm of hand; season pork with salt and pepper.
2. Place 3 tablespoons of the syrup in a shallow dish; place pecans in a second shallow dish. In a 12-inch skillet heat oil over medium heat. Coat pork in syrup, then press in pecans. Place pork in skillet in single layer; top with remaining pecans and syrup from dish. Cook 3 to 4 minutes each side, just until pork is pink in center. Remove from skillet. With a slotted spoon, remove any pecan pieces in skillet; spoon over pork.
3. Stir orange juice, the remaining 1 tablespoon maple syrup, cumin, and cayenne into skillet. Cook, uncovered, for 1 to 2 minutes until slightly thickened. Pour over pork. Serve with orange wedges.

Superb sauce! Needs more pecans. Rather then trying to put pecans on pork while frying, just make the sauce with them in. They fall off of prk
10/23/2011 06:36:39 PM Report AbuseI had similar problems as another reviewer. The pecans mostly fell off the pork, and even over medium heat, the syrup burned and blackened. Tonight I will start from scratch with the remaining uncooked pork. I will cook the pork on its own, then make a sauce with the syrup, pecans and other ingredients (over lower heat!).
10/20/2011 05:06:50 PM Report AbuseI don't know if I did something wrong or what, but this was horrible. The syrup caramelized and burned, the pecans fell off, and the sauce was completely inedible. Maybe with some tweaking it will be a good dish. I'll try baking it next time.
