Medallions of Pork with Apples

1 pound pork tenderloin

cloves garlic, minced

tablespoons olive oil or butter

20 ounce can sliced apples, drained

teaspoons snipped fresh thyme or 1/2 teaspoon dried thyme, crushed
Directions
1. Cut tenderloin crosswise into 1/2-inch slices. In a 12-inch skillet cook garlic in oil over medium-high heat for 15 seconds. Carefully place the pork slices in the hot oil. Cook for 2 minutes on each side or until browned and no longer pink in center.
2. Add drained apples and thyme to skillet. Cover and cook for 1 minute or until apples are heated through.
3. Makes 4 servings
