Maple-Thyme Pork Chops
Ingredients
  • 4
    boneless pork loin chops, about 3/4 inch thick (about 1-1/4 pounds total)
  • 1/4
    teaspoon salt
  • 1/4
    teaspoon ground black pepper
  • 1
    tablespoon canola oil
  • 2
    tablespoons finely chopped shallot
  • 2
    tablespoons chopped pecans, toasted
  • 2
    tablespoons maple-flavored syrup
  • 1
    tablespoon melted butter
  • 1
    tablespoon snipped fresh thyme
Directions

1. Sprinkle chops with salt and ground black pepper. In a very large skillet heat oil over medium-high heat. Add shallot; cook and stir for 1 minute. Add chops; cook for 9 to 13 minutes or until pork juices run clear (160 degrees F), turning once halfway through cooking time.

2. Meanwhile, in a small bowl combine pecans, syrup, butter, and thyme. Place cooked pork chops onto 4 dinner plates. Top with syrup mixture.

This is delicious! I add a splash of apple cider to the pan, for the last few minutes of cooking, and it turns out great! Serve with roasted red-skinned potatoes and your family favorite veggies!!!
