cup Bacon and Brown-Sugar Mustard or spicy brown mustard
1. In a large bowl combine basil, sugar, fennel seeds, red pepper, salt, black pepper, and garlic. Add ground pork; mix well. Divide pork mixture into four equal portions. Shape each portion around a flat-sided metal skewer into a 6-inch log.
2. For a charcoal grill, grill meat on the rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until done (160 degrees F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place meat on grill rack over heat. Cover and grill as above.)
3. To serve, use the tines of a fork to slide the meat from the skewers. Serve in toasted buns with mustard. Makes 4 sandwiches.
