Denver Potato Casserole
medium Yukon gold potatoes, thinly sliced (1-1/3 pounds total)
ounces cooked ham, cubed
small sweet yellow onion, chopped
cup shredded Colby and Monterey Jack cheese (4 ounces)
  1. Preheat oven to 350 degree F. Grease a 2-quart square baking dish; layer half of the potatoes, half of the ham, half of the sweet pepper, half of the onion, and half of the cheese in prepared baking dish. Repeat with the remaining ham, sweet pepper, and onion. Top with the remaining potatoes.
  2. Bake, covered, in preheated oven for 45 minutes. Uncover and bake about 15 minutes more or until potatoes are tender. Sprinkle with remaining cheese. Bake, uncovered, about 5 minutes more or until cheese is melted. Makes 4 servings.
