Denver Potato Casserole

Directions

  1. Preheat oven to 350 degree F. Grease a 2-quart square baking dish; layer half of the potatoes, half of the ham, half of the sweet pepper, half of the onion, and half of the cheese in prepared baking dish. Repeat with the remaining ham, sweet pepper, and onion. Top with the remaining potatoes.
  2. Bake, covered, in preheated oven for 45 minutes. Uncover and bake about 15 minutes more or until potatoes are tender. Sprinkle with remaining cheese. Bake, uncovered, about 5 minutes more or until cheese is melted. Makes 4 servings.

Could be good, but some kind of liquid is definitely missing from the ingredients. Prepared per the given recipe, it is very dry, potatoes are like cardboard, nothing is cooked. I mixed in a can of soup when reheating leftovers -- much better, but some broth might have worked too.

This looks good ! There are red tomatoes? on top that aren't listed in the recipe. Maybe it's the wrong photo or you may have forgotten the tomato garnish. Either way-I think I'll try it.
