Chunky Chipotle Pork Chili

Ingredients

Directions

  1. In a large saucepan, heat oil over medium-high heat. Add onion and garlic; cook about 3 minutes or until tender.
  2. In a medium bowl, toss pork with chili powder and cumin; add to saucepan. Cook and stir until pork is browned. Add sweet pepper, beer or beef broth, picante sauce or salsa, and chipotle chile peppers. Bring to boiling; reduce heat. Cover and simmer about 5 minutes or until pork is tender. Stir in beans; heat through. Top individual servings with sour cream. If desired, garnish with cilantro or parsley sprigs.

From the Test Kitchen

*Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
