1
cup dried tart cherries, chopped
-
1/2
cup cherry juice or orange juice
-
1
3 - 4 pound cooked boneless ham
-
1
18 ounce jar peach preserves
-
2
tablespoons lemon juice
1. Preheat oven to 325 degrees F. In a small saucepan combine 12 cup of the dried cherries and the cherry juice; bring just to boiling. Remove from heat and let stand for 15 minutes. Drain cherries and discard juice.
2. With a sharp knife cut three or four 1-12- to 2-inch-deep slits in ham, making cuts at a right angle to the direction ham will be sliced. Press in soaked cherries as each slit is made. Place ham on rack in shallow roasting pan. Cover with foil. Roast for 2 hours or until a meat thermometer registers 140 degrees F.
3. With a spoon transfer peach preserves into a small bowl; with kitchen shears snip any large pieces of fruit. Add remaining dried cherries and lemon juice. Spoon 12 cup of the preserves mixture over ham. Bake, uncovered, for 10 minutes. In a small saucepan heat the remaining preserves mixture; pass with ham. Makes 10 to 12 servings.

Ok people! They messed up...use your brain! It's 1 cup dried cherries and half cup cherry juice or orange if cherry is unavailable or preferred.
4/18/2011 03:00:26 PM Report AbuseIs it a misprint, or do you really mean "12" cups cherries! It is listed in two different places. 1/2 c maybe?
4/26/2010 06:20:35 PM Report AbusePour 12 cups preserve over the ham?
4/5/2010 06:39:30 PM Report AbuseExcellent! I made this recently for Easter dinner and everyone LOVED it! It made great sandwiches the next day also.
4/4/2010 01:59:18 PM Report AbuseIt would be impossible to put 12 cups of anything in a small sauce pan, it should have been 1/2 cup, typo's are easy to make.
