Apple-Sausage Rigatoni
Ingredients
  • 6
    ounces dried rigatoni (about 2 cups)
  • 8
    ounces cooked smoked sausage, halved lengthwise and cut into 1-inch pieces
  • 1 1/2
    pounds Golden Delicious apples, cored and cut into 1/2-inch thick slices
  • 1/2
    cup whipping cream
  • 1/2
    cup crumbled Gorgonzola or other blue cheese
  • Snipped fresh basil (optional)
Directions

1. In a 4-quart Dutch oven cook pasta according to package directions; drain. Set aside.

2. In same Dutch oven cook sausage until lightly browned. Add apples; cook, stirring occasionally, until apples are lightly golden, 5 to 7 minutes. Stir in cooked pasta, whipped cream, and cheese. Heat through. Garnish with basil. Makes 4 servings.

My family liked this recipe. I used apple-chicken sausage, fat free half and half, blue cheese & braeburn apples because I had some on hand that I needed to use and we like the "tart" flavor over "sweet" apples. I believe I cut out quite a few calories using the substituted ingredients. I only gave it 3 stars because I changed the recipe.

Both my husband and I really enjoy this recipe. I don't make it too often, so it's a nice treat when we do indulge in this tasty dinner. I use turkey sausage, granny smith apples, and I've made it with both gorgonzola and feta. It definitely has a bit more of a bite when using gorgonzola. I have this recipe tucked away in my recipe box - will keep making it for years to come.

I'm with vickie91024. I thought it was just okay. I think it might have been better with a flavorful broth-based sauce rather than cream, which, in my opinion, made the the dish taste rather bland.

I used an Apple Chicken Sausage, golden delicious apples, and blue cheese. I added a litle butter to the apples and sausage while they were cooking to bring out more flavor and added more blue cheese just to use up the block I bought. In order to mellow out the flavor of the blue cheese, I also added some crumbled goat cheese and a drizzle of pure maple syrup. I think the fresh basil is a must--I think I probably added 1/3 cup, plus a genereous amount of kosher salt and pepper. Delicious!
