Plantain Fries

Directions

  1. To peel each plantain, use a sharp knife to cut off the ends and cut lengthwise through the peel. Using your fingers, pry the peel loose and remove. Halve the peeled plantains crosswise and cut each half lengthwise into 1/2-inch-thick wedges.
  2. In a large skillet heat oil over medium-high to high heat. Working in two batches, cook plantain wedges in hot oil about 4 minutes or until lightly golden brown. Using a slotted spoon, transfer wedges to paper towels; drain and cool slightly.
  3. Meanwhile, in a large bowl combine the warm water and the 2 tablespoons salt; stir to dissolve the salt. Soak the fried plantains in the salt water for 1 minute. Using a slotted spoon, transfer wedges to dry paper towels; drain.
  4. Working in two batches, return the wedges to the hot oil; cook for 3 to 4 minutes more or until golden brown. Transfer to dry paper towels. Season to taste with additional salt. If desired, serve with lime wedges.

Cousins of the banana, plantains are similar to potatoes in starch content. Choose green, unblemished ones for these fries.
