Pasta and Fresh Tomato Sauce
ounces dried rotini or fusilli
cups coarsely chopped plum tomatoes
teaspoons olive oil
tablespoons shredded fresh basil
cup shaved or grated Parmesan or Romano cheese
- Cook the pasta according to package directions; drain.
- Meanwhile, in a saucepan combine tomatoes, olive oil, and salt. Cook over medium-low heat until heated through and tomatoes start to juice-out slightly. Stir in the basil.
- Divide pasta among 4 plates. Top each serving with some of the tomato mixture. Sprinkle with Parmesan cheese and pepper. Makes 4 servings.
