Mama's Amazing Ziti

pound 95%-lean ground beef

cups shredded carrot

10 3/4 ounce cans reduced-fat and reduced-sodium condensed tomato soup

ounces dried cut ziti pasta (about 2 1/2 cups)

tablespoons snipped fresh basil or 2 teaspoons dried basil, crushed

teaspoon onion powder

teaspoon garlic powder

cup shredded part-skim mozzarella cheese (4 ounces)

cup shredded Parmesan cheese (1 ounce)
Directions
1. In a 4-quart Dutch oven, cook ground beef and shredded carrot over medium heat until meat is brown. Drain off fat. Stir tomato soup, the water, uncooked ziti, dried basil (if using), onion powder, and garlic powder into meat mixture in Dutch oven.
2. Bring mixture to boiling; reduce heat. Cover and cook about 25 minutes or until ziti is tender, stirring occasionally. Stir in fresh basil (if using) and mozzarella cheese. Sprinkle individual servings with Parmesan cheese.

My son loved this recipe and had 2 large helpings. He says that I HAVE to make it again. I thought it was on the bland side and added extra noodles, a can of tomato paste, extra spices to make it taste better. I thought it was better but still needed something. I think I'll try sausage and chicken broth next time like the other reviewers did and see if that helps.

2/3/2012 11:08:19 AM Report AbuseJust made this for the first time and it ws surprisingly yummy for stove top, tomato soup ziti. I did add a 28 oz can of diced tomatoes, but that's because I doubled the amount of noodles. I also didn't add the carrots as I didn't have any on hand. My DH loves tomatoes in his italian food and my kids eat alot, so I needed to double the amount of noodles. That said, my DH had 3 large servings. My DD didn't like it too much, but my DS ate it and that says ALOT. He doesn't eat pasta.
1/4/2012 07:13:13 PM Report AbuseThis recipe is very easy although the taste is somewhat bland. I make a similar dish called lasagna soup which is more flavorful. If I were to make this again I'd use sausage instead of beef and chicken stock instead of water.
1/3/2012 06:38:26 PM Report AbuseThis recipe was very quick and easy to make. It tasted good too! I used a can of tomato sauce as well to keep it moist since I used 12oz of noodles instead of 8oz.
