Oven-Melted Tomatoes with Goat Cheese and Mint
Ingredients

roma tomatoes, halved

teaspoons sugar

teaspoon kosher salt

teaspoon freshly ground black pepper

tablespoon olive oil

ounces goat cheese, crumbled

cup fresh mint leaves
Directions
  1. Preheat oven to 300 degrees F. Place tomatoes, cut sides up, on a 15x10x1-inch baking pan. Sprinkle with sugar, salt and pepper. Bake for 1 hour or until sides of tomatoes just begin to crinkle. Let cool. Drizzle with olive oil. Top with goat cheese and mint. Serve at room temperature.
