Ingredients
1 1/3
1 1/2
teaspoons baking powder
1/2
teaspoon salt
1/4
teaspoon baking soda
1
teaspoon ground cinnamon
1/4
teaspoon ground nutmeg
2/3
cup packed brown sugar
3/4
cup regular rolled oats
1/2
cup snipped dried apples
1/2
cup chopped walnuts, toasted

Directions

  1. In a 1-quart jar, layer ingredients in the following order: flour, baking powder, salt, baking soda, cinnamon, nutmeg, brown sugar, oats, sugar, dried apple, and walnuts. Seal; store in a cool, dry place for up to 1 month. Makes 12 muffins.
  2. To make muffins:
  3. Preheat oven to 400 degrees F. Grease twelve 2-1/2-inch muffin cups or line muffin cups with foil or paper bake cups; set aside. In a large bowl, combine one egg, 3/4 cup buttermilk, 1/3 cup cooking oil, and 1 teaspoon vanilla. Add muffin mix from jar; stir just until moistened (batter should be lumpy).
