Mint Pea Dip
Ingredients
- 2 cups fresh peas or frozen peas, thawed
- 1 ounce Parmesan cheese, grated (1/4 cup)
- 2 - 3 tablespoons olive oil
- 2 cloves garlic, minced
- 2 - 3 tablespoons snipped fresh mint
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- Fresh Mint
- Crushed red pepper (optional)
- Assorted fresh vegetables
- Toasted baguette slices
Directions
1. In a medium saucepan, bring 4 cups water to a boil. For frozen peas cover and simmer for 10 to 12 minutes. For fresh peas cover and simmer for 4 minutes. Drain and cool.
2. In a food processor combine peas, Parmesan, olive oil, garlic, mint, salt and pepper. Process to desired consistency. Top with mint and crushed red pepper, if desired. Serve with fresh spring vegetables or smeared on toasted baguette slices.
