Plum Good Pork Chops

Ingredients

  • 3  tablespoons plum preserves
  • 1  green onion, thinly sliced
  • 1  tablespoon soy sauce
  • 2  teaspoons lemon juice
  • 1/8  teaspoon curry powder
  • Dash  ground cinnamon
  • Dash  ground red pepper
  • 4  pork loin or rib chops, cut 1-1/4 inches thick (about 2 pounds total)
  • 1  clove garlic, split
  •   Plum wedges (optional)

Directions

For sauce, in a small saucepan heat and stir preserves, green onion, soy sauce, lemon juice, curry powder, cinnamon, and red pepper over medium heat until bubbly. Set aside. Trim fat from chops. Rub both sides of chops with cut side of garlic.

Grill chops on an uncovered grill directly over medium coals for 25 to 35 minutes or until juices run clear, turning once and brushing with sauce during last 10 minutes of cooking time. Makes 4 servings.

To grill by indirect heat: Arrange preheated coals around a drip pan in a covered grill. Test for medium heat above the pan. Place chops on grill over drip pan. Cover and grill for 35 to 45 minutes or until juices run clear, brushing occasionally with sauce during the last 15 minutes of grilling. If desired, garnish with plum wedges.
