Mediterranean Chicken Pita Sandwiches
- In a large bowl toss together chicken, garbanzo beans, diced tomato, red onion, and feta cheese. In a small bowl combine yogurt, mint, garlic, cumin, black pepper, and salt. Spoon yogurt mixture over chicken mixture; toss to combine evenly.
- To serve, spoon chicken mixture over one pita bread round. Top with cucumber slices and the other pita bread round. Cut into 4 wedge sandwiches.
