Jamaican Pork with Melon Salsa

cup chopped honeydew melon

cup chopped cantaloupe

tablespoon snipped fresh mint

tablespoon honey

boneless pork loin chops, cut 3/4 to 1-inch thick

teaspoons Jamaican jerk seasoning

Fresh mint leaves (optional)
Directions
1. For melon salsa, in a small bowl, stir together the chopped honeydew, cantaloupe, 1 tablespoon mint, and honey. Cover and refrigerate until ready to serve.
2. Trim fat from pork chops. Rub both sides of chops with jerk seasoning. Grill chops on the rack of an uncovered grill directly over medium coals for 8 to 12 minutes or until chops are slightly pink in center and juices run clear, turning once. Serve salsa with chops. Garnish with additional mint, if desired.
