1. Lightly coat a 3-quart rectangular baking dish with cooking spray. Arrange bread cubes in prepared baking dish. Layer mushrooms, green onions, and Canadian bacon over bread. Sprinkle with shredded cheese.
2. In a large bowl beat eggs and egg whites with a rotary beater. Stir in milk, cottage cheese, wine, mustard, salt, black pepper, and red pepper. Carefully pour egg mixture over bread. Cover and chill at least 2 hours or up to 24 hours.
3. Preheat oven to 325 degree F. Bake strata for 40 minutes. In a small bowl stir together Parmesan cheese and wheat germ; sprinkle over strata.
4. Bake about 10 minutes more or until a knife inserted near center comes out clean and top is golden brown. Let stand for 10 minutes before serving. Makes 10 servings.
