Lemon-Garlic Marinade
Ingredients
  • 1/4
    cup olive oil
  • 1
    teaspoon finely shredded lemon peel
  • 1/4
    cup lemon juice
  • 1
    tablespoon snipped fresh tarragon or 1 tsp. dried tarragon, crushed
  • 1/2
    teaspoon coarsely ground black pepper
  • 4
    cloves garlic, minced
Directions

1. In a small bowl, combine oil, lemon peel, lemon juice, tarragon, pepper, and garlic.

2. To use, pour marinade over chicken in a resealable plastic bag set in a shallow dish; seal bag. Turn bag to coat chicken. Or pour marinade over chicken in a ceramic or glass bowl or dish. Turn chicken to coat. Cover container.

3. Marinate chicken in the refrigerator for 1 to 2 hours. Drain chicken, reserving marinade. Brush chicken with marinade halfway through grilling. Discard remaining marinade. Makes 4 (1 tablespoon servings) (enough for 2 pounds chicken).
