Jerk Seasoning
Ingredients
  • 1/4
    cup sugar
  • 2
    tablespoons dried thyme, crushed
  • 2
    tablespoons ground allspice
  • 1
    tablespoon ground black pepper
  • 1 1/2
    teaspoons salt
  • 1 1/2
    teaspoons ground red pepper
  • 1 1/2
    teaspoons ground nutmeg
  • 3/4
    teaspoon ground cloves
Directions

Combine all ingredients. Rub over meat before grilling. Makes about 2/3 cup, enough for 3 pounds poultry, pork, seafood, or vegetables.
