Margaritas Fresca

Kosher salt
lime, cut into 9 wedges
1 1/2
cups Triple Sec or other orange liqueur
cup tequila
cup lime juice
fresh jalapeno chile peppers, halved, stemmed, seeded, and thinly sliced* (optional)
Ice cubes or crushed ice
cup snipped fresh cilantro (optional)


  1. Place salt on a small plate. Rub rims of eight 8-ounce glasses with 1 of the lime wedges. Dip rims of glasses into salt to coat; set aside.
  2. In a pitcher combine Triple Sec, tequila, lime juice, and sugar. Stir until sugar is dissolved. If desired, add the chile peppers. Chill until ready to serve.
  3. To serve, add the remaining 8 lime wedges and ice to the pitcher. Pour into salt-rimmed glasses. (Or, if you are using the cilantro, muddle 1 lime wedge and 1 tablespoon snipped cilantro in each salt-rimmed glass. Top with ice. Pour tequila mixture over ice.)

Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
