Maple-Pecan Breakfast Porridge
Ingredients

cups water

cup cracked wheat
1/4
teaspoon salt

large red-skin cooking apple, such as Rome Beauty, Jonathan, or Braeburn, cored and chopped

tablespoons pure maple syrup
1
teaspoon ground cinnamon
3
tablespoons chopped pecans, toasted
 
Vanilla low-fat yogurt (optional)
Directions
  1. In a medium saucepan combine the water, cracked wheat, and salt. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes. Stir in chopped apple. Cover and cook for 2 to 5 minutes or until cracked wheat is tender. Remove from heat; let stand, covered, for 5 minutes.
  2. Add syrup and cinnamon to hot cereal. Stir until well mixed. Divide mixture among four serving bowls. Sprinkle with pecans. If desired, top each serving with a spoonful of yogurt.
