Lettuce Cups with Blue and Bacon
Ingredients
- 1 head romaine lettuce
- 3/4 cup refrigerated bottled blue cheese salad dressing
- 1/2 cup crumbled blue cheese (2 ounces)
- 1/2 cup chopped roma tomatoes
- 2 thick slices peppered bacon, crisp-cooked, drained, and crumbled
Directions
1. Cut head of lettuce crosswise about 4 inches from the top. Separate leaf tips. Place 12 of the leaf tips on a serving platter to use as cups. Cut the remaining lettuce crosswise into shreds.
2. Fill lettuce cups with shredded lettuce, salad dressing, cheese, tomatoes, and bacon.
