Minted Lamb Chops

lamb rib chops, cut 1 inch thick (about 2-1/2 pounds total)

Directions
1. Trim fat from chops. Place chops in a plastic bag set in a shallow dish. For marinade, in a small bowl combine the snipped mint, lemon juice, oil, water, ginger, paprika, cumin, salt, ground red pepper, and garlic. Pour over chops; seal bag. Marinate in the refrigerator for 4 to 24 hours, turning bag occasionally. Drain chops, discarding marinade.
2. Place chops on the rack of an uncovered grill directly over medium coals. Grill for 12 to 14 minutes for medium rare (145 degree F) or 15 to 17 minutes for medium (160 degree F), turning once.
3. Transfer chops to a serving platter. Sprinkle with the shredded mint. Makes 4 servings.

- Tip Broiler Method:Place chops on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 7 to 9 minutes for medium rare (145 degree F) or 10 to 15 minutes for medium (160 degree F), turning once.
