Italian Turkey Salad
Ingredients

cups Italian blend mixed salad greens

ounces thinly sliced reduced-sodium deli turkey, cut into bite-size pieces, or tofu (fresh bean curd), cut into bite-size pieces

yellow sweet pepper, stemmed, seeded, and sliced into rings

cherry tomatoes, halved

teaspoons chopped green onion

teaspoons grapeseed oil

teaspoons balsamic vinegar

teaspoons snipped fresh basil

teaspoons lemon juice

teaspoon salt

teaspoon ground black pepper
Directions
  1. In a large bowl combine salad greens, turkey, sweet pepper, cherry tomatoes, and green onion.
  2. For dressing, in a small bowl whisk together grapeseed oil, vinegar, basil, lemon juice, salt, and black pepper. Pour dressing over salad; toss to coat. Serve immediately.
