Italian Penne

Ingredients

ounces dried whole grain penne pasta (1 cup)
 
Nonstick cooking spray

cup chopped onion (1 small)

cloves garlic, minced

14 1/2 ounce can no-salt-added diced tomatoes, undrained
1 1/4
cups chopped roma tomatoes
1
14 ounce can quartered artichokes, drained and halved

cup chopped cooked chicken breast
1/4
cup Kalamata olives, sliced

teaspoon salt
1/8
teaspoon ground black pepper
2
ounces fresh mozzarella cheese, coarsely chopped

tablespoons fresh basil leaves

Directions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Lightly coat a large saucepan with cooking spray; heat over medium heat. Add onion; cook about 3 minutes or just until tender. Add garlic; cook for 1 minute more. Stir in tomatoes, artichokes, chicken, and olives. Cook and stir about 5 minutes or until heated through. Stir in cooked penne, tossing gently to heat through. Sprinkle with salt and pepper. Top with fresh mozzarella cheese and basil.
